Green Summer Salsa

Why not use that margarita  blender for more than cocktails – after you have mixed the drinks… fill that mixer with 1 or 2 roasted or boiled tomatillo’s, add some fresh garlic, 1/2 avocado, 2 bunches of fresh cilantro, a couple of roasted and peeled and seeded jalapenos, squeeze of lemon, salt and pepper and whirl away till smooth and beautiful bright green, taste for seasoning and heat, adjust and whirl some more and serve… Drinks and Salsa in less than 15 minutes….really! Note: go ahead and add the cilantro stems too – mucho flavor there!

Pot de Creme Dessert for Your Valentine

Pot de Creme Dessert its very French, very romantic, very rich, very sinful, very simple….Pot de Creme, aka – Pot of Cream – its a classic dessert and can be romantic as …well, you know what im sayin’.

Here is a real different interpretation of it, its so so easy to do, even at the last minute as in you forgot its Valentines Day and its dinner time and your gonna need a sexy dessert….cuz Valentines Day always ends with a Perfectly Romantic Dessert.

Here Go’s:

Ingreds:

12oz choc chips – (good ones)

4 eggs

Gran Marnier Liqueur- a splash or two

pinch of salt

80z very hot very strong java (black)

2 tbsp sugar

Directions:

in a blender – add choc chips,eggs,liqueur  and salt – pulse to blend 5-7 times

with motor runnin – pour in hot java slowly and smoothly in a steady stream- it will melt choc chips and create a smooth mixture – pour into fancy cups, goblets, wine glasses…any kind of sexy vessel…into fridge to chill and firm up…

whip cream and top off each serving with a dollop…

serve with A

Easy Chicken Caprese Salad…

Easy Chicken Caprese Salad – Its a little late to be talking about tomatoes and summer salads but we just have to share this one with you. Grilled Chicken Breasts with a traditional Caprese Salad.  The usual ingreds. are spicy marinated mozzarella balls, (need the oil marinade for the chicken)…boneless chicken breast and cherry tomatoes sliced and basil.

Simple use the mozz. ball oil marinade to marinade the chicken for a couple

of hours. Grill off chicken, slice into bite-size pieces and toss with the sliced or whole-round mozz.  balls and basil and tomatoes (sliced or whole).

What a great easy salad to make and share even if it is a little late in the season.

Cosmo Cocktail – Smokin Kool Hot Drink This Summer

Cosmopolitan (cocktail)

Its hot out there, solution is Cosmo Cocktail…i mean its  really really hot out there, the grill is hot,  the deck is hot , the kitchen is hot….

how about some ” koolfrosty smoke” to take you mind off it all….

turn your fave Cosmo Cocktail  Martini into a frosty action packed vessel of bubbling frost…just buy a couple of buck worth of Dry Ice from your grocer – many of them do offer it nowadays, and it wont take much,… (and be sure to take a container Styrofoam preferred) to bring it home in…..

chip off a small rock of it, size of a quarter, and after the drink is poured into the martini glass, drop in the dry ice nugget ,  it will settle to the bottom of the glass and begin to bubble with a small frosty cloud….its so cool to watch….and it keeps that cocktail so chilled, you wont have to rush thru it….this is only for adult use….

Dry Ice can be dangerous – so be careful….a drink with this stuff in it is meant for sippin…. not slammin

Grilled Vegetables – Sizzlin’ Summer Vegi Grill-Saute

Here is the perfect way to serve up that bounty of summer vegi’s you’ve gathered at the Farmers Market this weekend….and do it outside on the side-burner of you  shiny like-new grill – grilled vegetables…

Though the basic principles still apply, you will be aplying them in the great outdoors –  EVO, Saute pan, some butter and garlic and maybe some white wine (or not).  Wash and prep/peel slice all the vegi’s, the likes of various squash, spring onions, peppers, more onions, green beans, maybe some fresh herbs….

Get the burner on med high, start with evo, butter and garlic, (keep the garlic in cloves so as to pick out if needed after cooking (on not)…after seasoning oil and butter add all the prepped vegi’s and saute till you like them, light crunchy or soft tender, it’s all up to you….add  a splash of wine salt and pepper (more than you think you need) and cover for a minute or two….

onto a stylish platter and serve as  a side to that grilled fish or meat…

One of the easiest ways to keep a large punch bowl cold is to make larger ice cubes, as it will take one giant ice cube much longer to melt than many little ones. To make a long-lasting, large cube, fill a rinsed-out milk or juice carton half-full with water. Then peel off the cardboard when it’s time to use.

Champagne lost its fizz?

Place a raisin in the glass and the last bits of carbon dioxide that remain will cling to the raisin, then be released again as bubbles. You can also try throwing a few raisins into the bottle before you make the final pour.
